Alongside Ají Amarillo and Rocotos, Ají Panca Lima is one of the most important chili varieties in Peru. It’s not (as mistakenly stated in many places) a Capsicum baccatum, but a Capsicum chinense. The Semillas production team brought the original seeds from Lima (Peru) in 2016. On a somewhat adventurous and not always completely safe journey through the country and the vegetable markets of Peru, the seeds were dried in the hotel room and then transported to Lanzarote in a suitcase. Like that chili enthusiasts all over the world have been able to enjoy this very special variety for many years. For classic Peruvian recipes, the slightly hot, large, dark brown pods are air-dried for a long time. Then they develop their charismatic, smokey flavor.
