Costeño amarillo is a slightly hot Capsicum annuum from Oaxaca in Mexico. Due to the commercialization of other varieties, this one has become a real rarity. Their pods ripen from green over ocher to orange and are very suitable for drying. In Mexico the powder is mainly used to color sauces. Costeño amarillo also provides the basis for the world-famous – in this case orange-yellow – mole (a Mexican salsa).
