Serrano Tampiqueño is probably the most commonly used Serrano. The pods of this Capsicum annuum are larger and longer than those of other Serranos and their flavor is more intense and full. Serrano (=Spanish: mountains) literally refers to the mountain ranges of the Mexican regions around Puebla and Hidalgo. There, this variety is especially popular in salsas such as Pico de Gallo. Don’t be fooled by the name Tampiqueño – which means “so small” – because these pods have a lot to offer. Their heat is more intense than the harmless-looking pods would suggest.
