Tabasco

Tabasco is surely one of the most famous Capsicum frutescens varieties. It’s the main ingredient for the famous Tabasco sauce from the McIlhenny Co. Tabasco is primarily grown in the Gulf of Mexico region. Its small plants produce high yields of upright, very hot pods that ripen from a creamy yellow over orange to a fiery red. They can also be processed when unripe, green, but only develop their sweet and fruity flavor when they’re fully ripe. In addition to making sauces, Tabasco can also be processed very well when dried. For a reason, this variety is an absolute classic and is celebrated worldwide.
