Biker Billy was created for people who find an ordinary jalapeño a little too tame. This American pepper was named after Bill “Biker Billy” Hufnagle, a cook, motorcyclist and television personality known for his enthusiasm for hot food. Burpee introduced the jalapeño around the end of the 1990s.

The pods are notably large for a jalapeño, reaching approximately 9 to 10 cm in length and around 5 cm across the shoulder. They can be harvested while still green or left on the plant until they mature to a deep red. Beneath the skin is the thick, substantial flesh associated with a good jalapeño.

Heat is where Biker Billy establishes its own identity. It became known specifically as a hotter jalapeño, with different sources placing it considerably above the typical heat of standard varieties and some giving figures of around 30,000 Scoville units. The result is recognisably jalapeño in character, but with considerably more bite.

As a Capsicum annuum, Biker Billy is extremely versatile in the kitchen. Its large, thick-walled pods are particularly well suited for stuffing and grilling, while they also work well for pickling, salsa and hot sauce. Fully ripened red pods can also be smoked and used in the same way as other jalapeños for making chipotle.

Biker Billy therefore offers more than an unusual name. Large pods, classic jalapeño character and increased heat make it a distinctive alternative for growers who want to move beyond the standard jalapeño without entering the world of superhot chillies.
